“This is about preparing food from scratch. We don’t use semi-processed ingredients; everything is made right here. We even bake our own bread. My dream is that we will also reach up to 75% locally-produced food in the future,” says Susanne Andersson, who runs the cafeteria at Svärtingehus Elementary School, where they have been preparing food according to the S.M.A.R.T. concept for several years.
“We’ve reduced the amount of meat by half now and augmented that with lentils and other forms of protein that have less impact on the environment. The reception was a bit shaky to begin with when S.M.A.R.T. was introduced, but now reactions are positive. The teachers notice a big difference in the children. They don’t get tired as quickly and have more energy.”
Patrick, the cook, has years of experience working in big kitchens. “Today it’s fun to prepare food,” he says, “all food is popular now. For me this has meant more artistic freedom to experiment and try new things, which has meant personal development in my professional role. The fact that the food is organic and less expensive too is a real plus.”
